What’s In The Oven: Embarassingly Easy Pork Roast

I almost feel guilty posting tonight’s dinner recipe. It’s sadly easy, but sometimes, in the kitchen, less is more. Here’s how to make a delish Bone-In (or boneless) Pork Roast without a lot of work.

Heat your oven to 325 F. Take a 3-5 pound pork roast and cut some 1″ long slits on the sides, top and bottom. Stick a clove of peeled garlic (about 5 or so, or until you’re tired of doing it) in each of the slits. Sprinkle top and bottom of roast well with kosher salt and fresh ground pepper. Put it on a rack in a roasting pan, and stick it in the oven.

Cook until internal temp on a meat thermometer reaches 145F. If you like, make gravy with the drippings and some chicken stock, wine or cream. Roasted garlic tastes yummy on the side, too.
